Over the past several months, my Instagram feed has been bombarded with tons of artsy, edited photos of a certain food item.
No, I’m not talking about overpriced fresh-pressed juices from jugofresh in Miami. Not sinful slices of crack pie from the trendy Momofuku Milk Bar in NYC. Not even pastel-colored macarons arranged strategically on the plate of an abroad student at Ladurée in Paris.
I’m talking about avocado toast.
Yes, that would be a piece of bread with avocado on it.
Lately, anytime you see a twenty-something girl eating brunch with her friends, you find avocado toast. Not from a specific spot, either – it’s easier to make at home than a bowl of Ramen.
So why is it all the rage?
I had to give it a try for myself after countless hashtags of #avotoast found their way to my feed.
Since I am all about the lazy way out of cooking, especially in the morning, I didn’t look up any intricate recipes of avocado mixed with spices and sauces. Instead, I simply scooped the flesh out of a ripe avocado and mashed away with a fork. I added a dash of salt and pepper, and a couple drops of lemon juice.
After placing it on my sad little piece of wheat toast, it didn’t look nearly filling (or Insta-worthy) enough. I wanted to add an egg, but I grumbled to my friend Elizabeth that I couldn’t be bothered to dirty another pan.
That’s when she gave me some game-changing news: you can MICROWAVE an egg.
Had I been living under a rock, or is this not common knowledge? Either way, it has changed my life. The eggs turned out like poached eggs! Simple, delicious, and most importantly… gorgeous. It’s all about the Insta, after all.
I googled some simple instructions for the egg-microwaving, and this is it in a nutshell:
– Fill a microwavable bowl with about half a cup of water.
– Microwave the water for a minute or so.
– Take out the bowl and crack an egg into the water.
– Microwave for another 30-60 seconds.
Voila! You have the most Instagram worthy egg you’ve ever seen. This is probably super insulting to chefs everywhere, but vital knowledge for lazy girls everywhere else.
I sprinkled feta cheese (is there any other cheese worth knowing?) onto the avo toast, then artfully placed the “poached” egg on top. Cut down the middle so the yolk runs out, and you will be the envy of Instagram stalkers around the globe. No, I’m serious. These two people from Europe started having a heated debate on my Instagram post about the best way to make avo toast.
I hate to post two breakfast blogs in a row, but this one is the perfect solution for a busy Saturday morning. So easy and filling that you can get on with your day, but so Insta-worthy that everyone will think you’re at an awesome boozy brunch. Including you.
