I’m always trying to up my protein intake…and always in the mood for a sweet treat. I have Pinterest boards full of lightened-up dessert and snack recipes that’ve been collecting proverbial dust for years. I finally put two of them to good use and was pleasantly surprised with the results.
First up are these Banana Bread Protein Muffins from I Heart Vegetables. I find that my sugar cravings start right when I wake up—I live for a pastry or pancake to start the day. These muffins are a good way to curb your craving without inducing that sleepy, gross feeling you get after brunching. I kept any additions (chocolate chips, nuts, etc.) out of them, but realized once I tasted them that they needed a little pizazz, so I’ve been heating them in the microwave for 10 seconds and smearing a little natural peanut butter on ’em.
Obviously, the other time of day that my sweet tooth kicks into high gear is at night. I don’t feel complete until I’ve ended my day with something chocolatey! So, these Vegan Protein Brownies from Running on Real Food seemed like the perfect healthy solution. There are only five ingredients and you can use a food processor—couldn’t be easier! Since there’s no flour, sugar, oil or butter, don’t expect these to have the consistency of “real” brownies, of course. They’re much more mousse-like, as the recipe creator accurately describes. But chocolate cravings? Certainly satisfied.
