Chocolate Zucchini Cookies

I’ve been trying to stay on track in terms of diet and exercise, but my sweet tooth never lets up. You know those people that say if you give up sweets for 21 days you never crave them again? I beg to differ.

Luckily, when you put a vegetable inside a cookie, it becomes healthy. (That’s totally scientific. Don’t question it.)

I had some zucchini in my fridge that needed to be used up, so I did a quick skim of my Pinterest boards and found a recipe for these Fudgy Double Chocolate Zucchini Cookies from How Sweet Eats. They were delicious—more of a mix between a brownie and a cookie than just a straight-up cookie. In other words, they were perfection.

The problem is that I ate almost the entire batch in approximately two days. Sooo…the health factor may be in question.

Regardless, you should make these. Don’t just take my word for it—my best friend/toughest critic called them “bangin,” and he eats like a teenager that’s going through a growth spurt and just finished hockey practice.
